About the Author
Anna grew up in the Appalachian Mountains of Virginia where her family instilled in her an unwavering love and appreciation for the natural world. She spent summers hiking through the Shenandoah mountain range, leading backpacking trips as a counselor at Shiloh Quaker Camp. The feeling of freedom, complete exhaustion and connection with the earth that she found during these trips served as a guide for subsequent life choices. She went on to earn a Masters of Science in Nutrition at Bastyr University. It was during her time at Bastyr in Seattle, Washington that she first set foot on the Pacific Crest Trail. Since then, she’s completed over four thousand miles of thru-hiking. Anna has learned from some of the best in plant-based nutrition, completing internships with the Physician's Committee for Responsible Medicine in Washington DC and the McDougall Program in Santa Rosa, CA. She worked as a facilitator for the Complete Health Improvement Program in Walla Walla, Washington, giving cooking demonstrations and helping patients transition to a plant-based lifestyle. Currently, she works as a Registered Dietitian, Diabetes Specialist, in Okanogan, WA helping individuals to overcome chronic disease through dietary changes.

As a fellow dietitian, I know the importance of good nutrition, especially during strenuous exercise. Anna's guide lays out what you need to know about the benefits of a plant-based diet for endurance hiking in a comprehensive and understandable way. Not only does she explain the "why," but she also shows you the "how" in a way that will help everyone from beginners to experts. Her recipes and sample meal plan inspire me to start planning my next trip. Highly recommended for anyone interested in maximizing their next hiking (or even camping!) experience.
A pretty good guide for plant-based diets on trail with a specific emphasis on thru-hiking. Too often are backpacking cookbooks based on overnighters or just a few days. I especially appreciate the note on 'drawing the line', and that it is better to eat something rather than nothing at all, if you must break your vegan diet on trail. The recipes are fairly standard though---nothing I haven't found online already. Granola, curry, lentil stew, etc. I do wish more vegan backpackers would dive into the wonderful world of Butler's Soy Curls.
Although not a vegan myself, I loved this book and highly recommend it to anyone interested in eating more healthy and delicious food on the trail. As a dehydrating novice, it was an excellent guide and inspiration to start making my own hiking food. I’ve since trail tested several of the recipes and started trying out my own recipes on overnight and longer backpacking trips.
I am vegan, but have resorted to vegan junk food far too many times to satisfy my hiker hunger. I have been looking for a way to add calories and quality nutrients to my trail menu so that I can actually replace the minerals, vitamins, protein, etc. that I used up during the day's trek.I enjoyed this book and it was just enough to get me excited about dehydrating and taking my meals on an upcoming, albeit, much shorter backpacking trip than the PCT. There were enough recipes to get me started, but not so many that I spent too much time thumbing through (clicking through?) meals to try out. I would have given a 5 star if there were just a few more recipes...but I did appreciate the links offered to help me find more. I am excited about this after walking the El Camino in Spain and having beer and olives for lunch too often! :DPatti
I really liked the practical information about maintaining a health plant based diet. Time for me to get my dehydrator going! The recipes look yummy and I will be trying them out on my next hike.
Great direction for sufficient vegan long distance trail foods to provide enough nutrition to satisfy needs, homemade and low cost
As an avid thru-hiker and aspiring vegetarian, I’m constantly amazed at how horribly unhealthy my diet is on trail. This book is a great resource to kickstart your resupply planning with some wonderful ideas and recipes for a big trip.
The Dietitian’s Resupply Box is a great starting resource for any plant-based eater who is taking on meal planning for a big hike. In her book, Dietitian, Anna Herby, covers why eating a plant based diet is beneficial, nutritional information on macronutrients (protein, carbohydrates, fats) and micronutrients (calcium, iron, B vitamins, electrolytes, phytonutrients), meal planning organization and dehydrating tips, and tasty DIY dehydrated trail recipes. When planning for a thru-hike (or any big hike) there is so much reading and research to get the logistics of each element of the trip dialed in. A Dietitian’s Resupply Box gave me all the information I would want - in a clear, concise, and organized manner – to start meal planning & preparation. It’s thorough in content, yet not exhaustive. Highly recommend for plant-based hikers.
